Organic vegetables and herbs in the Brasserie Pakhuis
During our constant quest for quality products our chef Koen Lefever came into contact with the people of Local Food Express.
The concept of Local Food Express originated in the realisation that demand for high-quality local and seasonal produce increases and that more and more attention is paid to products from organic agriculture. These products surpass the classic offer in quality but also from the aspect and taste. Local Food Express collaborates with a number of organic farmers and producers of specific produce in West Flanders. As these producers are situated in the Heuvelland and French Flanders, the ecologic burden is limited.
The offer of Local Food Express mainly consists of seasonal produce and is adapted on a weekly basis.
Their vision to actively involve customers in the composition of the offer is unique. The production plan is mainly determined by the customers, e.g. old tomato species and herbs, forgotten vegetables which thrive here but became obsolete. The goal is to further elaborate this concept to increase creative interaction between the farmers and the chef.
Therefore, our chef works with a wide range of qualitative and tasty organic vegetables which are difficult or impossible to obtain in the regular circuit.
A further big advantage is that Pakhuis is supplied quickly and thus can work with very fresh and qualitative produce, one of our goals.
A small selection of our current offer:
• Vegetables: bunches of carrots, leeks, fennel and old tomato species,
• Wild herbs, picked in protected pastures: tansy, borage flower and wild sorrel,
• Cultivated herbs: rosemary, oregano and thyme
• Cheeses: goat's cheese, cottage cheese, dice cheese
• Fruit: strawberries
In collaboration with our own farm Le Devant, where Bresse chickens, wild Guinea fowl, pigs and lambs are raised on organic fodder, our chef ensures that this initiative is an additional edge over competitors to serve our customers delicious dishes.
