Koen Lefever – chef of brasserie Pakhuis
In search of the best and most honest products, chef Koen Lefever of brasserie Pakhuis came into contact with Dries Delanote of the organic farm 'Le Monde des Mille Couleurs'. The farm is located in the western corner of our country, where owner Dries farms according to the traditional way. Without industrial methods, he lets nature take its course.
The name 'Le Monde des Mille Couleurs' refers to the beautiful colors that can be seen on the farm and the number of different products that are offered. Everything is edible: from parsnip to nasturtium, from field to fork. Dries supplies his products to many top chefs both inside and outside our country's borders.
Dries invited the kitchen crew of brasserie Pakhuis to explore the fields and greenhouses of the farm. The amazed looks of the team speak volumes about this special experience.
