Koen Lefever, chef of brasserie Pakhuis, emphasizes respect for the products used in the brasserie. Koen has been behind the stove of brasserie Pakhuis since 2004 and still emphasizes offering the best quality.


Koen is a man who is inspired by nature and the seasons. He is always searching for the freshest and most honest ingredients. He finds his inspiration in conversations with colleagues and dishes he has tasted during his travels from locals. When we asked Koen what he would do if he were not the chef of Pakhuis, he would like to run his own organic farm.


At brasserie Pakhuis, local suppliers are chosen who in handle their products consciously and cultivate them with respect. For example, farm 'Le Devant' was purchased. The farm is located in the heart of the Bresse region and covers about 76 hectares of meadows and forests. One-day chicks can develop into hefty Bresse chickens in all quietness. This means that Koen can serve his customers as many authentic products as possible, with exclusive and integral quality care. Koen is known for his respect for product and taste, and that is precisely what brasserie Pakhuis stands for.
